There are many makers of watercolour paper and they all have their distintive qualities.  Bockingford Watercolour and Drawing Paper is very white;  Arches  Aquarelle is also white but has a softer hue; Saunders Waterford has the more creamy shade of white; Fabriano is  like Bockingford  a brighter white.

Higher quality papers are made on a mould machine.  The higher the % of cotton the better the quality providing more stability and archival properties. 

Hot Pressed (HP) surface has been treated with heat and is the smoothest paper.  Cold Pressed surface (generally known as NOT) is slightly more textured and a popular choice for all kinds of work.  Rough is what it says, a much more textured surface which is generally very popular for landscapes, seascapes, and abstract work.

As a general rule the lighter weight papers will need stretching.  Watercolour paper over 425gsm can be used without the need for stretching.
